•       1 ½ cups mashed purple sweet potato (about 1½ medium potatoes, cooked & peeled)

•       2 ¼ cups milk (dairy, coconut, or almond)

•       3 large eggs

•       3 tbsp melted butter or coconut oil

•       1 ½ tsp vanilla extract

•       2 ¼ cups all-purpose flour (or 1:1 gluten-free baking flour)

•       3 tbsp sugar or maple syrup

•       1 tbsp baking powder

•       ¾ tsp baking soda

•       ¾ tsp salt

•       ¾ tsp cinnamon or cardamom (or both!)


Instructions

1.     Cook & mash the purple sweet potato until completely smooth. You can boil, steam, or roast them — just make sure there are no lumps for the silkiest batter.

2.    In a large bowl, whisk together the mashed sweet potato, milk, eggs, melted butter, and vanilla until well combined.

3.    In a separate bowl, combine the flour, sugar, baking powder, baking soda, salt, and spices (if using).

4.    Add the dry ingredients to the wet mixture and stir just until smooth. If the batter feels too thick, add a splash of milk to thin it out.

5.    Heat a nonstick skillet or griddle over medium heat and grease lightly with butter or oil. Pour about ¼ cup of batter per pancake.

6.    Cook until bubbles form on the surface (about 2–3 minutes), then flip and cook another 1–2 minutes until golden and fluffy. Serve warm!
